Balsamic Vinaigrette

The mix of oil to vinegar is a personal choice….I love 1/2 and 1/2 on most recipes but it always depends on the ingredients. If I’m using a softer oil then I use less vinegar as I don’t want to overpower the oil. If I’m splashing in a Napa Valley extra virgin olive oil then I will use a bit more vinegar…again, to balance the flavors. The reverse is also true…if I’m using a balsamic then I’m going to use more oil to match the power of the balsamic vinegar…so here is my favorite combination….

Ingredients

  • 1/3 cup balsamic vinegar
  • 1/2 cup St. Helena Olive Oil Co. Sevillano Extra Virgin Olive Oil
  • 1/4 cup basil leaves
  • Grey sea salt to taste
  • Fresh ground pepper to taste

Instructions

Easiest thing to do is put it all in a small mason jar and shake it up….or mix it in a bowl if you prefer. It’s not complex….simply all about the quality of the ingredients.
