Little Gem Salad with Pears, Figs and Walnuts featuring BV Tradizionale and French Grey Salt 

 

The Ingredients

For the salad:

3-4 heads little gem lettuce (or 2 heads romaine)
1 pint figs, cut into quarters
1 large pear, cut into thin slices
1/3 cup roasted walnuts, roughly chopped

For the dressing:

2 tbsp BV Methode Tradizionale
2 tsp lemon juice
1 tbsp Dijon mustard
1 tsp honey
1/2 cup Extra Virgin Olive Oil
French grey salt
Pepper

 

The Recipe

For the salad:

  1. Wash & dry the lettuce, then tear into bite-size pieces. Place in a large bowl along with the figs, pear and walnuts. Set aside while you make the dressing.

For the dressing:

  1. In a blender, blend together the BV Tradizionale, lemon juice, mustard and honey until homogenous. With the blender running, slowly stream in the EVOO until it has all been added and you end up with a smooth, homogenous dressing. Add grey sea salt and pepper, to taste.
  2. Toss the salad with the dressing, to taste.
